The Chef Of Provisions Local Kitchen Juan Alcantara moved to the Northern Rockies from central Mexico in the late 1990’s. Starting as a line cook at one of the more popular restaurants in Teton Village, Juan honed his craft working under some of the top chefs in Jackson Hole. Over a ten year-long apprenticeship, Juan worked as a sous chef in a variety of prominent Jackson Hole eateries, with menus that included Italian, Austrian, American (contemporary and classic/Western) and — of course! — Mexican.
